Apple Sauce

8-10 apples – a micx of sweet and tart

3/4 c apple cider

2 tbs Lamponi E Maggiorana from di Luca Montersino (Italian fruit spread found at Sweet Teez)

1 tbs La Nonna’s  Sulla Honey (Italian honey found at Sweet Teez)

1 tso cinnamon

1/4 tsp nutmeg

1/4 tsp sea salt plus pinch

1/2 tsp chili powder — ancho if have

Peel core apples cut into cubes

Place in heavy pot with all ingredients cover and bake at 350 for 1 hour bring to stove top uncover cook until most liquid absorbed and apples can me mashed.

Roasted Pork Butt in Cider and Fig Molasses

1 3 -3.5 lb roast (can be larger)

1/2 bottle fig molasses from Dolci Pensieri Di Calabria or Albicocoa E Pistscchi Di Bronte from di Luca Montersino (both found at Sweet Teez)

11/2 c apple cider

1 med sweet onion

5 cloves garlic

Olive oil

2 bay leaves

Course Sea Salt

Fresh cracked Pepper

In a sauce pan pour 1/2 bottle fig molasses or Albicocoa E Pistscchi Di Bronte cider – med heat and reduce to 1/3 will be syrup

Meanwhile rub pork with sea salt (about 1tsp) and 4-5 turns of pepper mill and olive oil ( generous pour 1/8c)

Honey Bread

1 loaf of Ciabatta bread

2 tbs of La Nonna’s Sulla Honey (Italian honey found at Sweet Teez)

1/2 stick of butter

Melt butter and honey will be a think liquid

Pour over bread

Wrap in foil with a opening on top

Bake at 350 for 15 mins

Open foil and bake for 5 more mins
